Water activity. This is a way of specifying the amount of water in a food, which is closely related to the relative humidity of the surrounding air. Water activity (P/Ps) is the ratio found by dividing the vapor pressure (P) of water in a food by the saturated vapor pressure (Ps) of pure water at that temperature. In general, a higher figure for water activity means that bacteria are more likely to multiply and, as a result, it is more difficult to keep the food in good condition.
