What is Aw(Water activity)?aAn important consideration in choosing the right type of KEEPIT is knowing how much moisture a food product contains (water activity). Please refer to the table on the left to see how much water the food contains in general.<\/p>

Water activity. This is a way of specifying the amount of water in a food, which is closely related to the relative humidity of the surrounding air. Water activity (P\/Ps) is the ratio found by dividing the vapor pressure (P) of water in a food by the saturated vapor pressure (Ps) of pure water at that temperature.
